Easy Sopa De Conchas Recipe

Sopa De Conchas is a Mexican Shell Pasta Soup that is special comfort food that tastes amazing and can be done in as little as 25 minutes.
Growing up I was a picky eater and this Sopa de conchas became one of my favorite comfort food to eat of all time, My mom would have this ready for use at least 1 a week and I continue with this tradition in my own family.
What is Sopa De Conchas?
In English, Sopa de conchas mean Pasta Shell Soup. Even though pasta shells originate from Italy it has become a staple in Mexican culture, The soup is the perfect combination of tomato base soup and warm savory noodle that go hand in hand.
Easy Sopa De Conchas Recipe
Equipment
- 1 Pot
- 1 cutting board
- 1 knife
Ingredients
- 1 lbs Ground beef ( I use 90 % lean )
- 1 each Garlic cloves
- 3 each Roma tomato (sliced)
- 1/4 each Yellow onion ( sliced)
- 8 cups Water
- 2 tbsp Chicken bouillon
- 1 tsp. Salt
- 7 oz Shell pasta (1 package)
INSTRCUTION
- Start by Cutting Roma tomatoes into quarter pieces, slice your onion, peel your garlic clove, and dice the potato.



2. Place the tomatoes, Onion, And garlic into a blender and blend until fully smooth, if you’re having a hard time blending vegetables add 1 cup of water to the blender.


3. To a hot pot place your ground beef and cook for 3 minutes on one side to get a nice brown color and the flips over and add your pasta shell and cook with the meat for 3 more minutes, after the 3 minutes add the dice potatoes.



4. Once you add the potatoes you will add tomato sauce, water, chicken bouillon, and salt and bring it to a boil first. Once it boils you will place a lid and lower the heat to low and cook for 25 minutes.



5. Serve in to a bowl and enjoy.
