Made this last night. Sauce was perfect (use both the Dark and Light soy sauce). White pepper gave it a nice little kick. Modified the quantities as my carrots were oversized. Ended up using 1 carrot, 2 stalks celery, 2 cups cabbage and 1/2 large onion, 3 cloves garlic and 4 green onion (though next time I’ll use all 6). Also added a 14 oz thinly sliced chicken breast. Made enough for 2 plus lunch today. Feel bad for the take out place I would get Chicken Lo Mein from, this homemade version is so much better. Did I say the sauce was perfect?

Dark Soy Sauce is a thicker and stronger tasting version of Light or Regular soy sauce you normally find in the grocery store. From what I understand it should only be used if a recipe calls for it. Can be a bit overpowering. Some folks say you can substitute light for it. I made the mistake of substituting dark for light (thinking darker and richer would be better) and ruined my dinner so beware. I can only seem to find Dark Soy Sauce in an Asian grocery store, which I’m fortunate to have near me.
